Kelley's Thumbprint Cookies
2/3 C. sugar
1 C. butter, softened
1/2 tsp. vanilla
2 C. all-purpose flour
1 can chocolate icing
Preheat oven to 350.
In a large mixer bowl, combine sugar, butter, and vanilla extract.
Beat at medium speed, scraping the bowl sides often until mixture is creamy.
Reduce speed and add flour.
Continue mixing until well-blended (may need to use hands).
Shape dough into 1" balls, making an indentation in the center of each.
Place on an un-greased cookie sheet and bake 12-15 minutes.
If the cookies spread too much in cooking,
chill the dough one hour or add 1-2 tbs. flour to the rest of the uncooked dough.
Remove from oven and cool slightly before removing from sheet.
When cookies are completely cool, pipette a swirl of the chocolate icing in each indentation.
