Irish Yogurt Bread


1 3/4 c. all purpose flour
1/2 c. currants or raisins
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt (I usually only use a dash)
8 oz. lemon, orange, or plain yogurt (I used lemon in my two tries).
2 tbs. vegetable oil (I used canola)

Heat oven to 375. Lightly grease round 9" pan.

Mix flour, currants, baking powder, baking soda, and salt in medium bowl.
Mix yogurt and oil; stir into flour mixture just until flour is
moistened. Spread dough in pan.

Bake 20-25 minutes or until toothpick inserted in center comes out clean.
Cut into wedges. Serve warm or cold.
